For our Spotlight this Monday, Junior ACU students Kirk Farrell, Jenny Dennis, and Josh Maday, along with ACU faculty members Dr. Suzie Macaluso and Dr. Michael Harbour introduce us to the work that the Justice and Urban Studies Team (J.U.S.T) has done in Dallas to understand and address the problem of urban food deserts.<\/p>\n

Along with highlighting a social justice issue that needs our attention, their work demonstrates two important points. First, we cannot understand or begin to solve a complex issue like food insecurity without a multi-disciplinary approach. Their research and problem solving draws on insights from all of the major areas of study that we have discussed in Cornerstone. Second, undergraduate students don’t need to wait until graduation to conduct meaningful research and prototype solutions to problems that matter.<\/p>\n
